Cooking something bold, daring or out of your comfort zone can pay off in a big way. Don’t be afraid to get creative with your current inventory and see what your chefs are made of.
Make it fun for the entire staff by encouraging a friendly competition. Have your staff vote on their favorite bold dish created by your chefs. Once the winning dish is chosen, add it to the specials list and see which server can sell the most. Make sure to incentivize the winning chef and server.
