Eben Freeman Heads to Asia for New Frontiers
(New York, NY September 8, 2009) Eben Freeman, the man Food & Wine magazine dubbed The Liquid Magician, is spreading his wings for the Far East, where some are already reveling in his Garam Masala Mai-Tais and Siamese Scorpion Bowls.
Long-time team member of the SoHo lounge Tailor in NY, Freeman has worked in New York City's food & beverage industry for over two decades. Recently, Freeman has left Tailor and begun to consider other opportunities in the US and part-time abroad in Asia.
One recent focus has included launching a global collective to inspire bar culture called the Cocktail All-Stars that has already made stops at Singapores World Gourmet Summit, Hong Kongs Mandarin Oriental hotels, in Jakarta with the Ismaya group, and upcoming in cities like Sydney and Shanghai. Fellow bar stars such as Linden Pride and Julian Serna of Sydneys Rockpool, Richard Gillam of London, Ryan Fitzgerald of San Franciscos Beretta, and Jim Meehan of PDT have also made appearances under this banner. Freemans collaboration with Sam Mason has also continued through his involvement in the All-Stars: they recently hosted a series of experimental dinners in Hong Kong inspired by childhood memories.
Another item atop Freemans agenda at the moment is an upcoming bar line (glasses, carts, and later tools) that he is creating with cutting-edge NYC designers AvroKO. As Wallpaper stated, Freeman is invaluable in advancing and evolving the way we savour spirits. Now, it is time for him to spread that knowledge into other areas and other places.
I have always been intrigued by the flavors, spice, and fresh, exotic fruits available in Asia. This is a once in a lifetime opportunity for me to make a mark on foreign soil, said Eben Freeman. I am hoping to keep opportunities alive in the states while creating bar programs and training and inspiring bar talent abroad.

Freeman has had the fortune to work with such visionaries as Jean-Louis Palladin, Jimmy Bradley, Kurt Gutenbrunner, and Danny Meyer. He was also one of 10 bartenders chosen to participate in a highly influential innovation seminar in Paris that involved Michelin-star chef Pierre Gagnaire and chemist Herve This. An avid cook, Freeman always has one foot solidly planted in the kitchen and one behind the bar. In 2002, he joined chefs Wylie Dufresne and Sam Mason at the ground breaking WD-50. It was here that Ebens talent flourished and he gained global recognition before moving onto Tailor with Mason. Eben will continue to reside part-time in the US and part-time in Asia along with his wife and two children.
A global collective established to inspire and explore drinks culture in emerging cultures, Cocktail All-Stars have just begun a tour of pop-up events that will makes its way around the world. Their 2009 tour began in Singapore and Hong Kong, with a stop in Indonesia in early August. The All-Stars events are a weeks worth of pop-up bar nights inspired by the golden age of travel and nicely built mix of music, taste, mood, art, style, and, of course, drinks. Watch this space for event dates in cities like Shanghai, Bangkok, Ho Chi Minh, Taipei, Seoul, Tokyo, and soon San Francisco and New York.
