Summer on Ice

The soft glint of the sun peaking out from the clouds can only mean one thing, summer is nearly upon us. With your patio, roof or outdoor area just about to open for the season, you’ll be attracting customers who are looking for respite from the heat. What better way to keep them hanging out at your bar or club than by offering some of these refreshingly quaffable drinks. The subtle tastes of rum or tequila mixed with fresh fruit juices and syrups will relieve guests of the oncoming Dog Days, so make sure you have signature summertime drinks available for your imbibing guests.

Spring Time ManhattanSpring-Time Manhattan

1½ parts Maker’s Mark
½ part Maurin Quina Liqueur
1 bar spoon Stirrings Ginger
4 dashes Peychaud’s Bitters
1 heaping bar spoon of orange marmalade

Combine all ingredients in a mixing glass. Fill with ice and shake until frost forms on the glass. Strain into chilled cocktail glass. Garnish with a fresh orange twist.


Bella BorachelaBella Borachela

2 ounces el Jimador Blanco Tequila
1 ounce BelloCello liqueur
Squeeze of fresh lime
A bit of agave
Splash of ginger ale

Shaken and strained, served up. Add a float of blood orange aqua fresco, and garnish with an orange-zest salt rim.


S.L.O. Punch

2 ounces rum
2½ ounces Perfect Purée Strawberry, thawed
¾ ounce lemon juice
3½ ounces orange juice

Shake all ingredients with ice and strain into an ice-filled glass.


Cruzan Strawberry Ginger Daiquiri

2 parts Cruzan Strawberry Rum
1½ parts fresh lime juice
1½ parts simple syrup

Fill mixing glass with ice. Add all ingredients and shake for 5 seconds. Pour into chilled Martini glass. Garnish with a lime wedge.

1½ ounces Cointreau
1½ ounces silver tequila
1 ounce fresh lime juice
½ ounce Monin Rose Syrup
1 pinch chipotle spice

Mix all ingredients into a cocktail shaker filled with ice. Shake vigorously and pour into a chilled coup glass. Garnish with floating organic yellow rose petals. For an added kick, complete with a chipotle and salt rim.


Silver PalomaSilver Paloma

2 ounces Familia Camarena Silver Tequila
3 ounces fresh grapefruit juice
½ ounce fresh lime juice
1 tablespoon agave nectar
Splash of soda water

In a cocktail shaker, combine all of the ingredients, except for the soda water, and add ice. Shake vigorously and strain into a High Ball glass over ice. Top with soda water, and garnish with a lime wheel.

2 parts Riazul Premium Silver Tequila
5 parts Mexican beer
1 part grenadine
1 pinch of cayenne pepper
4 parts Mercy, an alcohol-and caffeine-free beverage containing nutritional supplements

In a pilsner glass, combine the ingredients in the following order over ice: cayenne pepper, grenadine, tequila, then float with beer. Garnish with a fresh lime wheel, and top with Mercy.

4 bottles Herbal Mist White Tea
1 bottle chilled white wine
1 can Sugar-Free Liquid Lightning
2 cups chilled, sugar free, white grape juice
1 peach, sliced
1 red apple, sliced
1 orange, sliced
1 lime, sliced
1 lemon, sliced
2 kiwis, sliced
15-20 blueberries
10 frozen green grapes (instead of ice cubes)

Combine ingredients in a large pitcher and refrigerate for two hours. Be sure fruit is distributed evenly when served.
