Eco-Tripping

The popularity of the farm-to-table and green movement is becoming an omnipresent and pervasive part of American food and drink culture, meaning that mixologists with any level of acumen will incorporate these trends into their beverage menu. When it comes to mixing organic cocktails, it is, in fact, easy being green. With organic spirits that offer unique tastes and add a twist to classic cocktails, an eco-friendly alternative can make all the difference at your bar or club.

Organic Cucumber Delight

¾ ounce lemon juice
¾ ounce simple syrup
¾ ounce Domaine de Canton ginger syrup
1¼ ounces Square One Organic Vodka
1 ball organic cantaloupe
1 organic cucumber wheel

Muddle 1 cantaloupe ball and 1 cucumber wheel. Add the spirits and some ice into the glass and shake vigorously. Strain into an Old-fashioned glass filled with ice and top with sparkling water. Garnish with remaining cantaloupe and cucumber and serve immediately.


Tru BlueTru Blue

1¼ ounces TRU Organic Vodka
¾ ounce CITRY Organic Orange Liqueur
½ ounce fresh organic lemon juice (or 3 wedges squeezed)*
½ ounce blue simple syrup

Fill shaker with ice. Add all ingredients. Shake normally. Strain into a Martini glass, and garnish with a lemon twist.

*Leaving spent lemon wedges in shaker adds needed bitterness and depth.


VeeV Acai MojitoAçaí Mojito

2 ounces VeeV Açaí Spirit
4 lime wedges
¾ ounce simple syrup
1 to 2 sprigs of mint
6 to 10 frozen blueberries (optional)
Club soda

Tear and slap mint leaves to release oils and drop into the shaker. Shake all ingredients well with ice and strain into an ice-filled rocks glass. Top with club soda, stir well and garnish as desired.


Passion-Ginger Margarita
Created by Mixologist Junior Merino of The Modern in New York City and adapted by StarChefs.com.

2 ounces Siembra Azul Tequila Blanco
½ ounces Cointreau or triple sec
1 ounce passion fruit juice
½ ounce mango puree
¼ ounce fresh ginger juice
½ ounce Monin Passion Fruit Syrup
6 crushed coriander seeds
½ ounce fresh lemon juice

Put Margarita ingredients in a shaker. Combine ingredients for Jamaica Salt.* Dip the rim of an Old-fashioned glass in lemon juice and rim with Jamaica Salt. Shake Margarita and serve.

*Jamaica Salt:
1 cup of Kosher salt
½ cup of sugar
¼ cup of Jamaica Powder (hibiscus-flower powder)
1 teaspoon of cinnamon powder


“A Bitter Heart”
Created by H. Joseph Ehrmann of Elixir in San Francisco.

2 ounces Square One Botanical Vodka
½ ounce Campari
2 ounces Perfect Purée El Corazon, thawed
5 inches of fresh rosemary sprig

Strip three-fourths of the rosemary sprig leaves into a mixing tin and set aside a good-looking short top of the sprig for garnish. Muddle the rosemary, and add the remaining ingredients. Fill with ice and shake hard for 10 seconds. Strain up into a cocktail glass and garnish with the rosemary sprig.


Skinny MargaritaSkinny Margarita

2 ounces Casa Noble Crystal Tequila
1 ounce fresh organic lime juice (or the juice of 1 whole organic lime)
¼ ounce La Sierra agave nectar (or other organic agave nectar)

Combine all ingredients in a shaker with ice. Shake, strain and serve up or on the rocks. Garnish with a lime wheel.


Celery CiderCelery Cider

1½ ounces Organic Nation vodka
2 ounces apple cider
Dash simple syrup
Pinch of celery salt
3 dashes celery bitters
Juice of one lime

Combine all ingredients with ice, then shake and strain into a rocks glass over ice. Garnish with a celery-salt rim.
