Champagne Goes Pop — and Boom
Last November, guests at The Palazzo Las Vegas were given a new venue to experience, one with a devotion to Champagne. Laguna Champagne Bar offers five Champagne labels by the glass, including a Blanc de Blanc from Ruinart, 2000 Dom Perignon, a Rosé from Gosset, Veuve Cliquot and Moët and Chandon for the Brut pour. By the bottle, the menu has 30 Champagnes listed, and demi bottles, magnums and large formats also are options for guests; it will be revamped quarterly.
But it’s the Boom Boom shots that take a slightly elitist offering like Champagne and blend it with a sense of fun.
“It is a unique and luxurious experience,” offers Sebastien Silvestri, executive director of food and beverage at The Venetian and The Palazzo. “Guests are first greeted and escorted to their table, where the Champagne sommelier will offer Champagne as the suggested beverage.”
The Boom Boom shooters are $8 per shooter and are served on a wooden plank by the Champagne sommelier. After chatting about the selection, guests tap the shooter on the plank twice, making the Champagne foam before consuming it. The shooters include: Sparkling Café, with Navan, Patron XO Café Liqueur and Moët & Chandon Nectar Champagne; La Poire, with Absolut Pears, pear coulis and Moët & Chandon Brut Imperial; Orangina, with Belvedere Cytrus, Grand Marnier, orange juice, and Moët & Chandon Brut Imperial; and Imperial, with Grey Goose L’Orange, TY KU Citrus Liqueur and Moët & Chandon Brut Imperial.
As for the brands selected, Silvestri says he was looking to showcase some of the staff’s favorites but also some of the public’s favorites. “We wanted to make sure the guests would find what they are looking for,” he says.
