Trudy’s Spa Cocktails

Camelback Inn Resort & Spa in Scottsdale, Ariz. recently underwent an entire property overhaul, and one element of the facelift is the renewal of every on-site bar. Trudy Thomas, beverage director, revitalized each bar with its own signature cocktail list. For Sprouts, the restaurant located poolside beyond the spa, she introduced a line of “spa” cocktails featuring organic spirits such as 4 Copas Tequila, Square One Vodka and Juniper Green Gin.

I spent a lot of time researching the spa,” Thomas says. “I wanted to incorporate organic spirits, and every wine on our list at the very least is sustainably farmed, biodynamic, organic or all three. In the main lobby bar, for example, we have Del Maguey Mezcal, which is artisinal and organic.”

Thomas’ Caprese Bloody Mary (pictured) comes garnished with fresh mozzarella, basil and a grape tomato, and she hopes to add a few more spirits such as Crop, an organic tomato-infused vodka.

The 10 spa cocktails are all priced at $10, and guests can also order one of several organic beers. “Sales on cocktails have increased by three times outside at the spa,” Thomas says. “We implemented the program in mid-March, and we did it in stages. So it’s been an evolution.”
