Post Bulletin: Female Chefs Dish it Up

Women are the lead cooks in many homes, but somehow men far outnumber women as chefs in restaurant kitchens.

Celebrity chefs such as Rachael Ray are familiar faces, but they aren't in a restaurant kitchen. Fewer than half of today's graduates of the Culinary Institute of America are women. A woman has yet to win the "Top Chef" competition.

But the Rochester area has a fair number of female chefs.

Kathleen Schau, of Salad Brothers in University Square, has had a hand in the kitchen since she was small, helping at her Uncle's Italian restaurant in Chicago.

"Being involved with food has been my passion for as long as I can remember," she said.

Arriving here in the late 1970s, she worked at the Broadstreet, where Helen Gowan, the manager, introduced her to the nuances of French cuisine.

"She was my mentor," Schau said.

Schau later left to run her own restaurant in Zumbrota, then managed the Rainbow Cafe in Pine Island until it was sold.
