CHICAGO, Ill. (October 30, 2009) – Wine Director W. Craig Cooper introduces a new series of autumn-inspired sparkling cocktails and craft beers to the menu at Pops For Champagne (601 N. State St.), just shy of marking the bar’s 3rd year anniversary since re-locating to River North. With a splash of champagne incorporated into each signature cocktail, Cooper offers guests an opportunity to enjoy a variety of refreshing flavors and spices that are mixed in with the bite of popular spirits such as bourbon, brandy and rum.
New sparkling cocktails include choices such as the Chute de Shooni made with Calvados (apple brandy); Clément Créole Liquer; Dry Vermouth; Brut Champagne and a Five Spice Rim ($14). Or guests can sip on the seasonal Avenue A cocktail made with Rowan’s Creek Bourbon; Allspice Dram; Cointreau; Cava and Griottine Cherry ($13); or the Hurdy Gurdy made with Luxardo; Navan; Lemon; Whiskey-Barrel Bitters; Sparkling Rosé and Griottine Cherry ($11).
Pops also continues to serve some of their most popular selections through the fall and winter months such as the Shorty Shag cocktail which is made with 10 Cane Rum; Taylor Fladgate Tawny Porto; Pineapple Juice; Prosecco and Thyme ($13); Vie en Rose made with St. Germain Elderflower Liqueur; Sugar Cube; Peychaud Bitters and Brut Champagne ($14); and High Sage cocktail made with Hendrick’s Gin; Ice; Cucumber; Prosecco and a hint of Fresh Sage ($11).
For guests looking for something less sweet and an alternative to champagne, Cooper introduces an extensive selection of international and domestic craft beers. For the more adventurous, some of the international selections include: Unibroue Blanche de Chambly (Québec, $7); Coopers Brewing Sparkling Ale (Australia, $7); La Chouffe Golden Ale (Belgium, $10); Krusovice Drak (Czech Republic, $9); and Kasteel Rouge (Belgium, $10). While those looking to purchase a beer that was crafted closer to home can choose between the North Coast Brewing Co. Scrimshaw Pilsner (California, $6); Abita Light (Louisiana, $6); Bell’s Porter (Michigan, $7) and a selection of Chicago’s very own Goose Island beer.
