Expectations of a bartender

When you are staffing a new bar, what is a fair expectation of your bar staff in terms of knowledge?
I figure that every bartender should be able to name three brands of each type of liquor (gin, vodka, etc), describe the attributes of those liquors, know some of the standard drinks (martini, manhattan, etc), be able to pour a beer properly, and be able to demonstrate a standard, accurate pour.
When I was applying to Bone Fish Grill many years ago, this was a standard expectation of the servers there. I actually walked away from filling out the application and knew that I had to learn a lot more before I would be able to come back. Looking back I don't think it is an unreasonable standard to set.
What do you look for when hiring a new bartender?
