Recent Gigs: Honing his craft by working for Diageo as the Luxury Spirits Ambassador, Martensen also cultivated his cocktail crafting at Rosewood Mansion on Turtle Creek in Dallas, Texas. For the past seven months, Martensen has been taking on a larger role as proprietor and No. 1 barman at recently opened Cedars Social in Dallas.
What’s in the Shaker: “I am loving Rhum Agricoles — also Calvados — with quality agave spirits. Whether it is stirring or shaking, I like it all. There is some really exciting things happening in the bartending world, and it is great to be riding the wave of the American cocktail.”
What You’re Sipping & Why: “I am drinking Fernet Branca, Del Maguey’s Mescals and Cocchi Americano — and loving it!!! These spirits are just plain good. The complexity of the Del Maguey’s Mescals is amazing, and no matter what anyone says there is terroir in the maguey plant. As for the Cocchi Americano, it is lower in alcohol so it is nice to drink for the long haul of working behind the bar and has great flavor to it.”
What You are Dancing to while Mixing: “We play all kinds of music at the Cedars Social — really digging N.E.R.D and any funk. It is all booty-shaking music that the people love, and behind the bar, the positive energy is a must.”
Quirks & Quotable: “Honestly, you can learn about anything behind the bar if you are open to it. That is what makes the bar a special place. A life lesson behind the bar that I have learned is, every day is different. Once your day becomes stagnant, you need to move onto something different. I really don’t get irritated when I’m at a bar because it is always a place that changes.”
