Establishment Name: The Squire Lounge and The Matchbox, both in Denver.

Recent Gigs: Rolston started at Denver's The Squire Lounge in February of 2005 while also mixing drinks at The Atomic Cowboy for a few months. In 2011, he started bartending at The Matchbox while still keeping busy at The Squire Lounge. Knowing what he does about the bar business, in May 2010 Rolston and a few of his friends launched iX MiXer, a mixer for alcohol beverages that is infused with valuable electrolytes, vitamins, minerals and all-natural ingredients to help prevent hangovers.

What’s in the Shaker: “I'm always trying to come up with something new, something no one has done before. Everything has been done. The trick is to tweak it enough to make it new and interesting. The best compliment a bartender can get is, 'Wow, that’s really good! What did you make me?!' Oh, and of course always coming up with new recipes using iX MiXer.”

What You’re Sipping & Why: “It’s summer, so I’ve been drinking a lot of vodka and Citrus iX or vodka and lemonade. It’s very refreshing and light. I’m also a big fan of ciders; Strongbow is my favorite. I will always and forever be a whiskey drinker. [Jim] Beam and Jameson will always have a special place in my heart and my glass.”

What You are Dancing to While Mixing: “I mostly listen to old R&B while I’m behind the bar, but no dancing for me. That’s for the patrons. Stevie Wonder, Marvin Gaye, Otis Redding, Sam Cooke — you can’t go wrong. I play music that keeps everyone upbeat and in a good mood. Nobody likes an angry customer — or an angry bartender."

Quirks & Quotable: “Bartending has allowed me to meet people I never would have met otherwise — people from all walks of life. It has also taught me an infinite amount about patience, and as we all know, patience is a virtue."
